Resep Cara Membuat Gulai Kikil Masakan Padang
RESEP GULAI KIKIL SAPI PADANG
Berikut adalah olahan masakan dengan berbahan utama kaki sapi  yang dikenal dengan sebutan gulai tunjang atau kikil. Kikil yang merupakan makanan yang lezat dan tinggi kalsium ini biasa dihidangkan di restoran atau rumah makan Padang/ Minang.

Teksturnya yang khas empuk dan lembut membuatnya sangat enak bila dimasak dalam berbagai masakan. Masyarakat minang sangat pintar mengolahnya menjadi sebuah masakan berkuah santan yang kental dengan aneka bumbu dan rempahnya. berikut cara membuat gulai kikil bumbu kuning beserta bahan-bahan yang digunakan dalam resep.

Bahan dan Bumbu :
  • 700 gram kikil sapi direbus sebentar, angkat dan tiriskan
  • 500 ml santan kental dari 750 gram kelapa parut
  • 2 lembar daun jeruk
  • 1 lembar daun salam
  • 2 batang serai digeprek
  • 3 buah asam kandis
  • 1/2 sdt penyedap rasa atau sesuai selera
  • 1 sdt gula pasir
  • garam secukupnya
  • 1 liter air
Haluskan:
  • 6 butir bawang merah
  • 4 siung bawang putih
  • 6 buah cabe merah besar
  • 6 cm kunyit bakar
  • 3 cm lengkuas
  • 4 butir kemiri sangrai
CARA MEMBUAT GULAI KIKIL (TUNJANG) :
  1. Didihkan 1 liter air, masukkan bumbu halus, daun jeruk, daun salam, serai dan asam kandis. Setelah itu masukkan santan dan kikilnya sambil terus diaduk lalu beri garam, gula dan penyedap.
  2. Masak hingga kuah mengental dan kikilnya empuk sambil sesekali diaduk agar matang merata hingga 5 jam dengan menggunakan api sedang.

It is narrated on the authority of Amirul Mu’minin, Abu Hafs ‘Umar bin al-Khattab, radiyallahu ‘anhu, who said: I heard the Messenger of Allah, sallallahu ‘alayhi wasallam, say: “Actions are (judged) by motives (niyyah) , so each man will have what he intended. Abu Hamzah Anas bin Malik, radiyallahu ‘anhu, who was the servant of the Messenger of Allah, sallallahu ‘alayhi wasallam, reported that the Prophet, sallallahu ‘alayhi wasallam, said: “None of you truly believes (in Allah and in His religion) until he loves for his brother what he loves for himself.” [Al-Bukhari & Muslim]
