Resep Cara Membuat Toge Goreng Khas Bogor
RESEP TOGE GORENG
Menu ini merupakan salah satu jajanan kuliner asli nusantara yang populer di beberapa daerah, seperti toge goreng khas Bogor, Betawi atau Jakarta, Bandung, toge tauco (geco) Cianjur dan beberapa daerah lainnya yang tentunya dengan ciri khas variasi penyajiannya masing-masing.

Cara membuat toge goreng pada kreasi kali ini cukup sederhana, siraman saus sambal gorengnya yang berasal dari perpaduan bumbu tauco dan oncom ini membuatnya menjadi masakan yang bercita rasa unik dan sangat enak saat disantap.

Bahan dan bumbu :
  • 200 gram toge
  • 250 gram mie kuning
  • 4 buah tahu putih atau kuning ukuran kecil
  • 2 lembar daun salam
  • 3 cm lengkuas digeprek
  • 4 sdm tauco
  • 100 gram oncom dipotong kecil-kecil
  • 6 sdm kecap manis
  • 1 sdt garam
  • 1/2 sdt kaldu bubuk
  • 300 ml air
  • 5 sdm minyak untuk menumis
Haluskan :
  • 4 buah cabe merah besar
  • 5 buah cabe rawit merah
  • 2 siung bawang putih
  • 4 butir bawang merah
CARA MEMBUAT TOGE GORENG TAUCO ENAK :
  1. Bersihkan toge, cuci dan rendam sebentar dalam air panas hingga sedikit layu atau setengah matang lalu angkat dan tiriskan. Rendam mie kuning sebentar dengan air panas, angkat dan tiriskan. Tahu juga direndam dengan air panas dicampur 1/2 sdt garam selama 15 menit, angkat dan potong-potong dadu.
  2. Panaskan minyak lalu tumis bumbu halus, daun salam dan lengkuas hingga harum. Masukkan oncom dan tauco, aduk rata sampai harum kemudian tuang air, 1/2 sdt garam, kaldu bubuk dan kecap manis. Aduk rata dan masak hingga kuah saus mengental dan matang.
  3. Tata mie, toge dan potongan tahu dalam piring saji lalu siram dengan sausnya. Sajikan dengan taburan bawang goreng di atasnya.
