Resep Cara Membuat Tongkol Balado Suwir Pedas Bumbu Merah
RESEP TONGKOL BALADO SUWIR
Bumbu merah dari penggunaan tumisan cebe merah lalu dimasak dengan bahan utamanya ini biasa disebut sebagai bumbu balado yang merupakan salah satu seni masakan ala Padang (Minang) dengan ciri khas rasa pedasnya. Bermacam jenis ikan juga sangat enak diolah dengan bumbu ini, seperti ikan tongkol pada resep kali ini.

Dalam variasi cara memasaknya, daging ikan tongkol bisa disuwir-suwir lalu dihidangkan dengan baluran bumbu balado merah pedas yang dibuat dengan cara sederhana dan mudah namun bisa menjadi sajian dengan cita rasa yang cukup menggugah selera.

Bahan dan bumbu tongkol suwir pedas balado :
  • 1 ekor (650 gram) ikan tongkol
  • 1 buah jeruk nipis
  • 2 lembar daun jeruk
  • garam secukupnya
  • 1/2 sdt kaldu bubuk atau penyedap
  • 1/2 sdt gula pasir
  • 100 ml air
  • minyak goreng seperlunya
Haluskan :
  • 10 buah cabe merah besar
  • 10 buah cabe rawit merah
  • 6 butir bawang merah
  • 3 siung bawang putih
CARA MEMBUAT TONGKOL BALADO SUWIR :
  1. Keluarkan bagian dalam ikan, potong-potong dan cuci bersih kemudian lumuri dengan air jeruk nipis selama 15 menit. Goreng ikan hingga matang, angkat dan tiriskan lalu suwir-suwir.
  2. Panaskan minyak secukupnya lalu tumis bumbu yang dihaluskan bersama daun jeruk hingga harum. Tuang air, garam, gula dan kaldu bubuk kemudian aduk-aduk hingga tumisan bumbu mengental dan meletup-letup.
  3. Masukkan suwiran ikan tongkol, aduk rata dan masak hingga tercampur rata dengan bumbu dan mengering. Matikan api, angkat lalu siap untuk disajikan.
